Peach, Rhubarb and Blueberry Crumble

Crumble is the easiest dessert to make. You can pretty much use any fruit you like so feel free to play with my Peach, Rhubarb and Blueberry crumble and tweak it to your liking. I also made a delicious winter vegetable crumble you can find the recipe here.

*I recommend using individual ramekins for each person if you want a more aesthetically pleasing way of serving the crumble like here or just bung it into a baking dish like me because its easier!

You will need:

(like I said you can switch around the fruits depending on what you like you could use blackberries, strawberries, apples etc)

FILLING
2 Peaches sliced (see how here)
250g Blueberries
125g of chopped Rhubarb
CRUMBLE

(this is just a simple crumble but you can add pecans, pistachios etc)

200g plain flour
75g old fashioned oat/rolled oats/Scottish oats (they are the same thing)
2Tablespoons of cinnamon
6 Tablespoons of vegan ‘butter’ or real butter
A little maple syrup (my fruits were a little sour so I used a drizzle to make them less tart)

serve with custard /ice cream or vegan ice-cream or cream if your weird like my Dad!

Step 1 – Put all your fruits into a baking dish (drizzle a little Maple Syrup/honey/brown sugar if tart)

Step 2 – Add your flour, oats, cinnamon, sugar and butter to a mixing bowl. Mix it till the consistency is like that of small pebbles.
Step 3 – Sprinkle evenly over your fruits.
Step 4- Place in the oven until golden roughly 15-20 minutes at 200 degrees
Et voila – its done
